Torta alle mandorle (con aceto e bicarbonato)

Ebbene si’!

Una ricettina trovata su una vecchia rivista di cucina, lievemente modificata (non occorre che lo specifichi ogni volta, vero???????? 🙂 ).

Mi ha incuriosita perche’ nonostante la presenza delle mandorle che appesantiscono l’impasto contiene solo mezza bustina di lievito per dolci, del resto della lievitazione se ne occupano aceto e bicarbonato che devo dire hanno fatto un ottimo lavoro!!!!!!!!!!!!

Ingredienti:

  • 450 grammi di farina bianca
  • 200 grammi di burro morbido
  • 200 grammi di zucchero di canna (io 100 grammi di zucchero Muscobado e 10 grammi di Stevia in polvere)
  • 200 grammi di uvetta
  • 100 grammi (piu’ 2 cucchiai) di latte
  • 100 grammi di granella di mandorle
  • 2 uova intere
  • mezza bustina di lievito per dolci
  • 2 cucchiai di aceto (io aceto di mele)
  • 1 cucchiaino da te’ raso di bicarbonato (io Solvay)

Prima di tutto ho ammorbidito l’uvetta in acqua calda, poi l’ho sciacquata e asciugata con carta da cucina.

Nella planetaria ho messo farina e burro, poi il lievito, le uova, lo zucchero, l’uvetta e le mandorle.

In una tazza ho poi messo aceto e latte, in un’altra bicarbonato e due cucchiai di latte, poi ho unito tutto (schiuma e puzza forte di aceto, non preoccupatevi!)e poi tutto dentro nel boccale del Kenwood.

L’impasto mi pareva troppo denso (alle volte dipende anche dalla farina usata) e ho regolato con qualche goccio di latte.

Ho spruzzato il distaccante e spolverato di farina una tortiera apribile del diametro di 24 cm.

Ha cotto per 30′ a 190°, poi altri 30′ a 150°.

ingredients:

450 grams of white flour

100 grams (more ‘ 2 tablespoons) of milk
100 grams of chopped almonds
2 whole eggs
half a bag of baking powder
2 tablespoons of vinegar ( I used apple cider vinegar)
1 teaspoon baking soda ( Solvay )

First of all I softened the raisins in warm water, then I rinsed and dried with paper towels .

In the planetary I put flour and butter, then baking powder, eggs , sugar , raisins and almonds .

I then put in a cup vinegar and milk, in another baking soda and two tablespoons of milk, then I combined all ( foam and strong smell of vinegar, do not worry! ) And then everything inside the jug of Kenwood .

The dough seemed too dense (sometimes also depends on the flour used )

and I adjusted with a few drops of milk.

I sprayed the release and dusted with flour a cake pan opening with a diameter of 24 cm .

Cooked for 30 ‘ to 190 ° , then another 30 ‘ to 150 ° .

L’abbiamo tagliata ancora tiepida e sbriciolava tanto, ma poi da fredda la fetta rimane bella intera.

Da notare come sono ben distribuite le uvette in tutta l’altezza della torta 🙂
